Taste and Place—the origin of flavor. The taste of food depends on its specific flavor compounds. Pairing foods together is based on combining items with key flavor components in common. When usually restricted by the cultural or traditional context of a product, foodpairing based on favor profiles result in new, innovative combinations. This infographic visualizes region by color, as well as five major categories of flavor compounds by shape: sweet, sour, bitter, salty and spicy. Small graphs of complementing flavor combinations show common themes through flavors and where they come from.
